Our chef, Michael O’Sullivan prepares the finest of contemporary Irish cuisine and insists on using only the very freshest, local produce to do so. Local suppliers include Tim Jones for pork and poultry, Tom Cronin our butcher, John Paul for vegetables, the Spillane family for our fresh seafood and Twomeys for delicious ‘Clonakilty’ black pudding – a traditional Irish delicatessen. Our relationship with our food suppliers, is long-standing and relies of course, on the quality and consistency of their produce. We love to support local suppliers and we love to present our guests with a unique gastronomic experience at Randles Hotel. The wine cellar provides a choice of 13 fine wines – served by the glass, from which to select the perfect complement to your meal.
